I am not using a recipe. my wife is passed out drunk. I am trying to prepare for dinner. she usually makes food. I have seen/heard her make bread. I know the basic ingredients & process.

I used (I think):
1/4 cup rye flour
1/3 cup wheat flour
3/5 cup bread flour
2 quail eggs
1/2 tbsp sugar
1 tsp red star active dry yeast
1/4 cup milk
2 tbsp kafir yogurt
(some) water. maybe 1/4 cup?
tbsp butter
some(??) salt
some((??)) garlic salt

I then mixed with a spoon, then by hand.
I'm going to let sit for (rise) for 30 min, maybe 45??

I will then throw in the oven for 45(????) min at 375°F (???????)

am I making bread?

you need to beat the absolute fuck out of it for like 10 minutes after mixing. if its too goopy to do so then add more flour until its ok. then let it sit for an hour (covered with plastic wrap), split it into a couple smaller loaves, then leave it sit for another hour, covered again - should about double in size both times. then bake at 350 for about 45 but keep an eye on it, when it looks like it's done then it's probably done

the eggs, milk, sugar, butter, and yogurt are all unnecessary for simple bread and will fuck with your end result. depending on how you mixed it, if the two salts you used killed the yeast it wont rise and youll have a little biscuit ball. listen to >>19715080 for your best bet to get something decent

i'm assuming he's working from his wifes recipe which has ingredients listed but is hand written and doesn't go into full detail. seems like some good bread if executed right but if he's not kneading it and only rising for 30 min once with 1tsp of yeast, he's making concrete for sure

I am, however, observant.

We live an off grid, homestead lifestyle, so each of us is aware of the other's "core duties" and necessary functions... to a degree.

honestly, she might be better at some of my skills, than I am at several of hers.

currently, my first timer has gone off. "punched down" the ball, then folded it in on its self, and kind of pushed/pulled it into its self, forming into a ball, as I have seen her do.

timer reset for 45 min. rising again. house at 80°F 40min remaining. I guess I preheat oven now?

for anyone whoo cares, I have decided to thaw out fresh, jalapeño venison sausage for the meat of this meal. just decided this about 5 minutes ago. we have some home made sauerkraut. I think there is some shredded white cheese in the fridge.

still just hoping for a fair result.

OK... Here is the final result:

loaf came out quite alright.it is not too dense, not over-proofed, and not crumbly.

the flavor of the bread is nothing to write poetry aboot, but it is great for things that bread is intended for. it's very basic, but I assume it is healthy, as far as carbohydrates go.

I have used it to make a jalapeño venison sausage sandwich. it has homemade sauerkraut, mozzarella/provolone cheese, dill pickles, bacon, with mustard.

it held up just fine to toasting on the griddle.

overall, I would give the whole endeavor 7/10. despite listing salt as an ingredient, I think I may have forgotten it... unsure. it seems to need salt.

not bad for a totally whim, non-recipe bread, made in a pinch.

wife is still sleeping it off. I will get her opinion later.
