I like to season and lightly pan sear them, then build a pan sauce with butter, shallots, garlic, brown sugar, brandy, and cream. The cutlets are then finished in the sace with the rest reserved poured on top. I recommend steamed veggies and rice or orzo on the side to counteract the richness of the chops
