Tripas are top-tier when it's prepared right. Really, any kind of offal tacos are amazing as long as the cook knows that they're doing. My local taqueria even charges extra for tripas and they still sell out most days. I'm going to have to learn how to make them myself before I move out of Texas because there's no way I'll be able to find decent ones away from the border.
Luckily, I've already perfected my michelada recipe so I'll be able to carry my favorite Mexican drink with me when I go. The secret is chamoy, Cholula, and extra lime juice.
