Depends on what you mean by gelatin. It exists in all mammals so if you're eating a steak, you're eating gelatin. If you're referring to gelatin powder used to make shit like jello, it isn't used here. This is a broth made from cartilage rich parts and then chilled in the fridge where it solidifies. If you leave it out, it thaws, and if you put it in a pot on heat, you'll get normal soup.
