I've been working on perfecting cracker-coated chicken for a while now. I think you have to blitz them in the food processor, by hand the crumbs are too thick and some inevitably burn before the chicken is done. Also you want a fairly thick liquid (yogurt + mustard) to dunk the chicken in so the crackers stick.
And the cracker crumbs are to be mixed with grated sharp cheddar.

I think what's missing is maybe coating the cracker crumbs in oil or butter so its less dry. I want baked chicken, but moist.

I used to when I drank soda. I'd crush half a sleeve with a can of whatever. whenever my sister would make 'Italian chicken' in the slow cooker I would take a coffee mug and fill it with crackers then put enough sauce on it and crush it all up with a spoon then drink it. sometimes a few dashes of hot sauce or just more cracked pepper.

I used to think all saltines taste alike since they're such a basic food so I cheaped out once and bought this pack that was, like 78¢ or some shit instead of the good ones, which are about $2.
There's simply no comparison.
The cheap-os tasted exactly as you described. Good ones just taste... good. Yeah. Yeasty, almost, despite the fact that I don't think there's any yeast used.
Try a better quality brand or just a different one and see for yourself
