Isn't it essentially because Jews are so diasporic that most dishes of Jewish origin just get adopted and turned into the cuisine of that place. I'm sure there are tons of Italian, Greek, German, and American dishes had Jewish origin or heavy influence but just naturally became dishes of that nationality because of the nature of how we look at a places cuisine.
Which I feel like is why the 100% Jewish food you see tends to be really unappealing, it's essentially the stuff that no country wanted.
I am totally guessing. But it makes sense.

Also unlike other diaspora which tend immigrate all at once during a period of history where they establish a single cuisine/culture at the new place - like how Chinese immigrated to US/UK from Hong Kong so western Chinese food is almost exclusively Cantonese.
