Canned pork is oftentimes filled with salt and chemicals, read the ingredients.

Meanwhile sardines will be
Sardines, water.
And that's literally it. Granted some brands put seed oils and salt but you can find fish tins with just fish and water or fish and olive oil, no added sodium or anything to "preserve color and taste" spam has way more than just pork and water.
Granted tinned fish is kinda bland and just mush, so no preservatives comes at a cost.

there’s no commonly available producers of canned pork/beef that seem to care about quality, all you have is shit like corned beef hash that smells and tastes like dog food. There’s a good amount of tuna and sardine canners that use quality ingredients and it shows in the final product

Well I usually get sardines in water and cook with butter or lard so I'm okay there. Only really use olive oil for focaccia or other Italian dishes.
Regardless, the problem with most seed oils is when they're treated with chemicals to remove waxy substances or heated up to remove impurities, good olive oil is cold pressed and so gets neither of those.

it’s listed as extra virgin. quality seems good, though impossible to really tell because it picks up the aromatics and flavor from the fish by the time you open it. the sardines are packed tightly enough in there that you maybe get 2 Tbsp in the whole can so it’s not incredibly cost prohibitive

The problem is linoleic acid (LA). Extra virgin olive oil still contains much less than cooking seed oils, it also has more anti-oxidants and comes in dark bottles to protect it from UV.
Fish has omega 3s which cohnteract some of the negative properties of omega 6s like LA.

Still not ideal as the LA contents is still higher than coconut oil, tallow or butter, but if you eliminate all regular seed oils sources adding some evo olive oil isn't going to kill you.
The dose makes the poison.
