Jamaicanish cottage pie. Onion, garlic, orange bell pepper, cloves, cumin, bacon fat and ground beef. Garlic mash with egg wash, topped with coarse salt. Green beans blistered on a dry pan before frying with onions in oil and a pinch of lemon pepper. Also red cabbage from a jar. Not present, a pickle I added and simple lettuce salad in applecider vinnegar, evo, mustard dressing with a drop of honey and sliced onions. Onions sot in the dressing for a good while to reduce that string bite.

i have made a crumble from chorizo i wanted to use up before, btw. half bread and half chorizo, could also use onions or other aromatics, but this is just the basic tech: so you render the chorizo, then add the bread (and other additives) and simply very, very slowly cook out all the moisture until its all crisp and craggly. Great premade topping for pasta or saldas or soups or what have you and keeps just as well as fried onions. i would just store them in a lidded container. Of course, you can also change the ratios.
