Time to make a mushroom stew

Step one, prep. Onion, basic mushrooms, potatoes...

>> No.19689727

That's not enough mushroom. You need like 10x that

Yup, but those are the base. They get sauteed and added to the boiling stock

I wouldn't waste shrooms on the stock. Do you think you will be able to taste them?

Did someone call for more mushrooms? 1 kilo of milk caps and chanterelles go into a pan with the onion.

Why?

Flavor. The basic mushrooms get pureed with the potatoes. This is the base for the soup. The star are the milk caps and chanterelles

Ahh. I see. I also enjoy making mushroom soups and stews. Your technique is different than mine. Maybe I can learn something. Are those waxy potatoes?

>> No.19689774

These are the cheapest, floury potatoes. Boiled to all fuckery, they just need to puree easily with a stick blender. The starch thickens the soup and actually adds a nice flavor.

Additionally, thickening this way means you can re-heat the soup much better. Other thickeners do not work nearly as well as potatoes when making big soups or stews.

Other flavors I added:

Allspice
Black pepper
A lot of fresh parsley
Garlic
Clove

I had a sweet white onion. I would have used a yellow one, but ah well, that is what I had. I added some onion powder as well.

If you want to learn one thing from me, it is to add the delicate things at the end. I used to fuck up things by trying to cook garlic in high heat or lose herbs to high heat. Learn from my mistakes. Also, never smile back at the dude in a public bathroom
