Food truck that has challenges to get free food or win some prize. With all the social media challenge crap you might attract people and get free advertising that way.

A challenge like, eat this super spicy taco in under a minute and if you can go 1 minute without drinking anything after you get the taco free, 2 minutes and you win some other thing.

Food that is laced with psyllium husks. Do that to the main meals, and lace the sides with salt and msg.
People will literally come back because it gave them the itis. When you become profitable, start including fancier and more expensive ingredients, but always have something like a dollar menu.

A different but slightly similar idea: offer breakfast meals all day long with your regular meals. Not even McDonald's does this, and there's always someone that finished working bizarre hours that wants a breakfast meal.

I think that if OP wants to be successful, he should have a breakfast food truck, and figure out ways to convert breakfast items into what passes for meals in other areas. Hamburgers? Why not make take a hamburger bun and toss some cheese and breakfast sausage in there, with maybe an egg? ...and some veggies if the customers actually care about those things.
Fries? Well, potatoes go well with any meal. Not much to think about there.
Pizza? I'm not 100% sure how they are made, but breakfast pizzas do exist.

Food cheap and convenient enough to be reminiscent of fast food back when fast food was good.

Seriously, that's it. Make McDonalds in its hey-day, back when every restaraunt had a play place with all upper and middle class children in it, the burgers were always hot and cost an amount of money that you could make in about two minutes making minimum wage.

Now you have to deal with the public, the food quality and freshness have gone down, and the price has gone up. Its almost as expensive as sit-down meals and its trashing their bottom line. The Subway franchises in my area no longer even offer customizable sandwiches, and a footlong is $15, three times the price of the famous campaign that earned them their laurel wreath.

People don't want to cook when their labor is worth $100-300/hr and cooks make $12/hr. It is literally work for third worlders or robots and exhausted middle class cubicle workers would rather buy whatever is left of their free time back by paying Juan to make burgers instead, unironically. These businesses took off for a reason, they've just gotten away from what made them successful.

TL;DR
Make a burger joint where the burgers are made to order and don't creep above the price of $8 per sandwich.

French frys and other fried foods cooked in tallow and cane sugar 12oz sodas as a food truck, at a reasonable price, sold outside of bars would be a cash cow.

I second this, I'm tired of no good corn dog options outside of the state fair. All frozen corn dogs suck dick these days the breading is paper thin and the dog is somehow lower quality than Bar-S. But they are too much of a mess to make at home.
I would pay a premium to get a high quality corn dog from a truck or small restaurant. Do some specialty ones with brautwurst or different fillings. Feels like an untapped market and perfect for on the go types.
