This is what concerns me. It's less nutritious, it doesn't produce the same things real meat has like the more digestible heme iron, and companies are trying to say this is actually a good thing.

I think even if you like the idea, you should be concerned that companies are trying to pass off a less nutritious product as superior. Lab-grown meat has the potential to be great and cheap, but the people making it need to be scrutinized to make sure we don't basically end up with less nutritious junk food.

There are already problems with food being less nutritious because of the soil being depleted. And less nutritious processed junk food is already a big reason why there is an obesity crisis with people needing lifesaving medical care at younger and younger ages. When food is less nutritious people tend to overeat because their body is craving more than calories, it's also craving nutrients. Replacing meat with yet another less nutritious processed food isn't going to help any of that.

Stem Cell Biologist here, the problem with generating cultures of lab grown meat is the lack of heterogeneity in the cell types you can produce. It's the same issue that prevents us from producing fully funvtional whole organs in the lab.
Sure, we can generate myocytes (muscle cells), but can you also produce the adipocytes (fat cells) cells that give rise to all the gristle, the extracellular matrices and everything else that makes meat - meat both in a textural sense and otherwise?
What you're realistically going to get is myocytes with a bunch of other "junk" cells that are unintended byproducts of the differentiation process (since it's by no means even close to being worked out at this point in cellular-based tech). You might get astrocytes, glial cells etc. all mixed in with your intended product.
