I have been enjoying all kinds of omelettes and wish to find new unexpected flavors for omelettes. Omelettes are my sunday relaxation, when nobody else is awake, I wake up at 6 am and cook myself all kinds of omelettes. I have done a lot of the classics and a plain rolled omelette is among my favorites. As is an omelette with cold smoked salmon (pic related, even tho it was overcooked, as is evident from the picture)

Do you think pesto would go well inside a rolled omelette? I do enjoy pesto a lot.

How about some patee, like liver? I am sure I could find a good one, but which one should I try?

I've never tried asparagus with an omelette. I will definitely file that under "try when possible"

I have 6 eggos and their expiration date is in the next day or so. I would like to put them to güd use tonight or tomorrow morning.

What's some good ways to omelette this shit up besides just making round scrams and folding it over? I have milk and butter.

Also I have things like salsa, pesto, hot sauces, pasta sauces, etc. Very little fresh vedge except onion and garlic. I need some inspo

You have everything you need to make super satisfying french omelettes. I put a few tablespoons of milk in 2 eggs, I do not stir them or anything, just low heat till I can roll it. Sounds like you have the perfect opportunity to experiment and learn.

You can add butter, but try to roll them as soon as you can.

They are best when still a bit gooey in the middle. I recommend salting the top with flaky salt

Thanks anon I'll do just that. Luckily I just got a bag of cooking salt (just plain salt but it's large crystals) so I'll give it a dusting.

I'll probably defile it with hot sauce or salsa or something but I like my eggs wet and I got leftover stuff I want to use before it goes to waste

There are two versions. One has the filling include chopped crispy pancake and the other is more like a Western omelette.
Just sautee the seafood, remove from the pan, beat egg with pepper, sesame oil, fish sauce, green onion and coriander leaves, add the cooled seafood and fry as you would any other curded omelette (that halfway thing between scrambled egg and a French country omelette).
The pancake one is better, imo, but me annoying to make. Oh, actually, there's also a third version. The Cantonese one is more like egg flowers (furongdan) and is served with brown sauce.
