What to use when I can not get Mirin? Simply not carried by asian markets here because the law forbids them selling alcohol over 5.5 abv and liquor store obviously doesn't have it.

Can't be arsed to try to order online just because I want to try a small amount of it in frying chicken. Can I use a very mild white wine?

It's very simple, just put shochu, glutinous rice, and koji in a jar and let it sit a few months. If you can't get shochu just use vodka or something. It doesn't even produce gasses so you don't need a vent or something either just seal it up. Failing that if you can order eden foods products you can get their mirin it's got salt added though.

Pretty sure this stuff isn't considered alcoholic beverage so it shouldn't fall under liquor laws. Sure someone is going to try, but the stuff is way too overpowering to just sit around and sip or even shoot. It's the same with vanilla extract. It's usually like 30-40% alcohol but anyone can buy it.
