It is simple, just gotta get the timing right. Low and slow is the key, keep working the eggs and use good quality eggs.
I do scrambled eggs atleast once a week

Its good to start with. Can always just do the egg part instead of trying to juggle other things to cook and serve with them.
I get the pan hot and use plenty butter in the pan to begin with , and once that's melted, turn it right down to the lowest heat and pour in the eggs that id previously whisked together. Then from there, just keep gently folding and cutting through with a spatula till you see they are about half done, then in with salt and white pepper and a glug of cream. Then back to folding working it till the cream is fully incorporated and its cooked. Taste it again for seasoning and that's about it

I looked up a simple recipe so it didn't include anything like cream. Don't think I've ever eaten any with cream either so I will look into that

I use 3 eggs, butter, glug of double cream (heavy cream), salt and white pepper. Doesn't need anything else. Some recipes say milk but I prefer the double cream. If you do it right, should be very "velvety" eggs. Don't have to go nuts with it just a good glug will do, about 2 tablespoons
