Trying to ween myself into eating vegetables again, I haven't eaten them since I was a young child. I like some vegetables(Spinach, Peas, Green Beans, Carrots) but it gets boring eating them plain/salted.

What are some good healthy vegetarian/vegan dishes to help me introduce more vegetables into my diet? Only no go for me is raw tomatoes.

Roast veg in the oven with oil and herbs and pop them in the blender once soft. Add to pasta sauces, make soups, dips, etc.

there's a lot of vegetarian indian dishes if you're into that. also you can use veggie dishes with meat as a flavoring instead of the main flavor, a ton of chinese dishes do this, but my favorite is fried cabbage. also eggplant parmigiana and falafels are great veggie dishes

>roast for a while
>then add balsamic vinegar and roast moar for nice sticky balsamic veg
It will gas out any Jews in your house too. Perfect accompaniment to a meat dish. Goes well in couscous/rice.
