You use dried marrowfat peas soaked over night with sodium bicarbonate. Pic related is the main brand and comes with a bicarb tablet.
Or the quick way is you mush tinned marrowfat peas. No other peas work. You can buy ready done mushy peas in tins too

unironically the wigan kebab is the worst out of the three with the smack barn (although we have gravy not peas here) first and the babies head barn 2nd.
meat pies have too much bulk because of the crust, the smack barn (with one or two potato scallops) has a really nice crunch, the steak pudding is smaller than the meat pie and the crust has less mass so fits in better with the bread roll.

It's not split peas at all. That's for lentil soup. Its marrowfat peas. The bicarb breaks the peas down.

Far cheaper to get the tinned finished product. This is the best brand. Several UK food sites probably sell them. When i use em, just warm em give em a good stir and some salt to taste. Can add a little bit of butter too
