Why is cooking on a stovetop so hard? It's either ridiculously hot or not hot enough. I can't seem to find a "medium" setting. You can't control the temperature well on these things.

I have a glasstop (non induction) electric stove and it's fucking terrible. At least with those coil burners, you get a fairly consistent temperature at 1, 4, 8, or whatever. My glasstop has awful sensors and is almost impossible to control. Sometimes it won't even activate when set at a lower temp. Other times, it'll be on 1 and just going all out. I can't properly simmer with it because it always ends up bringing things to a full on boil. I'm at the point where I'm just going to get an induction burner and cook on the counter.

Being a poorfag for most of my life taught me to meticulously watch electric stoves because they're shit. Every electric stove is different and you need to babysit it until you know its quirks. If you're a good cook at all you'll figure it out through trial and error. Once you have a nice stove you'll feel spoiled.
