User probably goes no-toppings generally and is posting a picture for those in her (it's a woman, this was told to me through ancestral knowledge) feed that also dislike flavor. The place is then well established in the area that they don't mess up orders for picky people. Naturally this is a big deal as picky people eat out more than anyone else. I lived in El Paso for some time. Some of the best and most authentic Mexican Food one can get in the US, or so I was told. Don't get me wrong, there were some amazing Mexican joints there, but most of it was no different than what one could get at a Mexican joint anywhere else in the US.

It's pretty hilarious that everyone in America wants to brag about their Mexican food but doesn't want the Mexican.
Mexican food is remarkably similar across the US. The Mexican culture managed to integrate into America successfully, they even celebrate a vague state holiday from Mexico across the US.

I’ve had “authentic” Mexican food from a family restaurant and it was delicious but only because it was covered in cheese and 100% Tex max
I’ve had “authentic” Mexican food from a series of taco trucks and I gotta say using corn tortillas with cilantro and red onion doesn’t seem to qualify as “authentic” as much as it’s “Californian”
I’ve had authentic Mexican food from a food truck that was entirely blue corn tortillas, cabbage, and beans. I’m sure it was authentic because it probably cost $1.20 for the whole thing and was pretty mediocre but filling.
I’ve had authentic Mexican as cooked up by the Mexicans I work with and I’ll say they make a damn tasty soup, and everything else is unironically tacos with as much heat as they can put in there. Their tastebuds are fucked from a lifetime of spicy food so they literally put red chili flakes on everything they eat if it isn’t already doused in our hottest sauce and eaten with a raw jalapeno.
But like I said, the soup is good. Try Oaxacan if you can find it. It’s Mexico’s Alabama, food wise.
