Just tried "medium-rare dough" for my pizza. It was really good. I like to eat steak medium-rare so I've started preparing other foods medium-rare as well.

I know it's very difficult to understand so I will break it down for you: the reason why you cook chicken all the way through is that the cells in the chicken don't fully keep the bacteria out once the chicken is killed and cut.
with beef, the bacteria remains on the surface of the cut because of the composition of the muscle and fat. once you grind it, you're exposing it to the air and bacteria, which means then you have to cook it through

It's incredibly ironic that you're making the exact same fallacy that you're accusing him of (in your imaginary conversation that nobody but you was having). You're acting as though once you grind beef it becomes just as dangerous as raw chicken, and that's not even remotely true. Different foods carry different pathogens, and are exposed to them in different ways. The (different) pathogens in beef and chicken that are most likely to make you sick both typically come from the slaughtering process, which is obviously not the same for a cow and a chicken. If you live in a first world country it is very unlikely that you will get sick from eating ground beef that hasn't been cooked well-done. The same is cannot be said for chicken. They are not the same. If people were constantly getting sick from eating medium-rare burgers, every restaurant in the US would not serve them. And no, it doesn't matter that they put a disclaimer on the menu. Maybe they can't get sued if someone gets sick (I mean, they can if it resulted from improper food handling in the kitchen), but one bad Yelp review can put a restaurant out of business, and no restaurant would risk that if ground beef was anywhere near as dangerous as you imagine.
