Yeah, down at the Delaware shore, they take the British thing a bit far. They have a fresh cut fry place called thrashers that refuses to have ketchup, only salt, malt vinegar, and cider vinegar. Great fries, but I’m surprised they don’t hang a Union Jack and call themselves a chippy with their ketchup hate.
I’ve actually considered standing outside and selling ketchup packets and cups of both types of philly sauce, because that’s the best on fries

It’s a mix of hot sauce, hot and spicy mustard, ketchup,with salt,pepper,Italian seasoning,and a splash of Worcestershire for the red one and Mayo added for the pink one…
Basically different things that are at hand in the typical deli… ghetto places just mix hot sauce and ketchup, but it really needs the spices, mustard and Worcestershire

I learned to do it in a neighborhood Italian deli in philly when I was a teen, and still mix up a bottle to keep in the fridge to squeeze onto my fries and cheesesteaks til this day.

It also makes a hell of a marinade for chicken on the grill

I guess you have never worked in a philly deli or steak shop. It’s common as fuck and every place makes it a bit different, from a basic ketchup with a hard on mix with a bit of hot sauce to the more complex one I posted earlier. It’s just a mix of stuff on hand in the deli to make a better ketchup.
Stop thinking pats and genos are the arbiters of all things philly, they are only for drunks and tourists

Okay, I know of SPK hot sauce but only as a black people thing. I've even mentioned its ubiquity here in the past. But I've literally never heard of anyone asking for anything with salt pepper ketchup hot sauce except in the hood or when blacks from the hood order from food carts in Center City, usually as an accompaniment to egg sandwiches, cheesesteaks or fried Chinese take out wings (another Philly hood thing, general tso's wings, is way better)
Certainly never heard of this from a deli and certainly not one that would offer tallarico's.

Back when it was still called chinks steaks, he made one very similar to what I described above with the hot and spicy mustard, hot sauce, ketchup, s/p, and mayo.
Jim’s, Talk of the town and gooey Louie’s all did their own versions too.

I learned mine from John’s/doc’s deli
The spicy hot mustard, Italian seasoning and Worcestershire makes all the difference. Making it have a much more complex flavor than the sum of its parts.
He might have given it a squeeze of lemon juice too, but most places don’t have that that right at hand
