I was told growing up that it is the law, and that law was made to protect us because before we discovered pasteurization people died from food poisoning all the time. I never really question it most of my life till I did a study abroad and ate some un-pasturized stuff. It was like finding out I have been eating trash my whole life. Now I drive across state lines and pay extra to get unpasteurized and raw foods. I've seen some remarkable health improvements but get push back from people telling me I'm risking my life with such reckless behavior. Never tried unpasteurized milk given the place I go doesn't even carry it and I now have really bad milk allergies I got in my early 20s. Also I suspect part of it is that the name is very misleading as some I talk to think pasteurized means the cows get to freely roam a pasture and eat fresh grass. Most don't even know what we do to food anymore.

People were frequently getting poisoned... after the advent of industrial farming in the late 19th century. Because the conditions were so bad, the cows would get sick/infected, their poisonous milk would be mixed in with all the other milk, and it would be sold. Thats actually pretty much still how it is today. You dont have that problem with more ethical small-scale farms.

Thanks that makes sense. Heard similar things with bakery making bread as they moved from small towns to cites as bread became a commodity. Would think many foods had similar problems as market forces at the time really pushed for high volume at low price which lead to all kinds of bad stuff.

For many years I exclusively drank UHT milk because it was what I was brought up on. More recently I realized that non-UHT pasteurized milk tastes a bit better and is actually cheaper, so I just go for that since I always use it up before it spoils.
I feel like very few people drink it here though, the section for it in shops is very small comparatively. Most people drink UHT or get unpasteurized milk from a vending machine.
Also I find it very funny how that pic abbreviates ultra high temperature to UTH.
