They work in some instances. For example, a new small cuban sandwich shop opened near my house and I bought a sandwich. It was amazing, but the pickles were sweet. I had never had a cubano with sweet pickles, but holy fuck it was good and I don't like sweet pickles. I complemented them them on their innovation the next day and they looked horrified. They went and tasted the "dill" pickles and found that they were indeed sweet pickles that were mislabeled as dill. Now I only make my cubans with sweet pickles, as God intended.

Just a simple brine
vinegar, salt, coriander seeds, whole mustard seeds .peppercorn, bay leaf
I like them sour so I add more vinegar
It's pretty easy
