Our first attempt at pizza looked a lot better than that. Is it truly representative of NY pizza? Admittedly, I was using the pizza setting and our oven has a built in 'pizza stone'. The key is to let the dough to ferment a long time and get the oven as hot as possible. You really need to go above 280 degrees C and you get those puffy blisters and scorched appearance. Should be done in about a minute. Less if using a proper outdoor oven.

It's just good pizza, nothing complex to wrap your mind around. It's simple, reliable, usually doesn't cost too much for a slice and if you're getting it at a place with a nice stove it's always gonna taste amazing. Part of why I'm so picky when it comes to pizza even after moving away is that, at it's core, it's just NOT that fucking complicated. It's very basic food, so when you go from place to place to place looking for pizza and you get this gigantic variance of thick doughy weird ass pizzas you just throw your hands up and say 'fuck it'. It's like if every restaurant that made rice outside of a single area of china for some reason couldn't do it without burning or undercooking it, it's just really fucking weird to us, so we can't help but go on and on about it.
