The cultural capital of America shifted to California in the latter half of the 20th century. The twin economic engines of Hollywood and Silicon Valley have long since overtaken Wall Street. Soon Texas and Florida will follow. And now they’ve even lost their precious pizza.

Americans have destroyed all their regional culture so they have to cling to one or two things that are "theirs". Like Buffalo with wings or Maine with lobster. >From where I stand by my truck, this could be anywhere. We must have decided this, right? At some point? That we wanted it all to look the same. And I can understand that decision. We all like to feel somewhere familiar, now we can have that feeling wherever we are. No matter the climate or geography, you come inside the chain and you are exactly where you were before, like there was a magic door to the city you feel most comfortable in. It’s a positive that can’t be denied. But we have paid a price for this . . .

>It’s hard to tell regions apart just by looking at the buildings now. A CVS is a CVS, a Starbucks is a Starbucks. I’m not here to moralize; I’m just telling you what it is to be a traveler now. Every place is built like every place, so the only thing that tells you you’re moving is the nature that’s been allowed to stay. As you head north, the trees shift from broad, leafy canopies to the narrow spurs of conifers and the mountains turn from big hills to great structures of rock topped with vast slopes of untouched snow. Or, on another drive, the hills dot themselves away into nothing and you realize you haven’t seen elevation in hours, nor many trees, just a lot of grass and a lot of road. Or you leave behind a wetter, greener climate and you see the the world around you fade from grass to kindling to dirt and rocks and then, like a sign marking a border you didn’t know you were crossing, the first great cactus: harbinger of the waxing desert. It’s up to nature to tell us we’re moving. Otherwise, each K-mart sign looks like each K-mart sign. Every Subway sandwich tastes the same.

It could be literally anything, you need to understand how this attitude begins. The smugness over NYC food isn't coming from real New Yorkers. It's all rich kids moving to New York from upstate who have their parents paying for their $4,000/month Bushwick apartment so they can start their dream podcast/journalism/artists career.

These kids then arrive in an environment where they're brushing shoulders with the working class for the first time in their lives, and they become fascinated with what these "real people" eat. It's basically the song Common People playing out in reality.

The key is to let the dough to ferment a long time and get the oven as hot as possible. You really need to go above 280 degrees C and you get those puffy blisters and scorched appearance. It's just good pizza, nothing complex to wrap your mind around. It's simple, reliable, usually doesn't cost too much for a slice and if you're getting it at a place with a nice stove it's always gonna taste amazing. Part of why I'm so picky when it comes to pizza even after moving away is that, at it's core, it's just NOT that fucking complicated. It's very basic food, so when you go from place to place to place looking for pizza and you get this gigantic variance of thick doughy weird ass pizzas you just throw your hands up and say 'fuck it'. It's like if every restaurant that made rice outside of a single area of china for some reason couldn't do it without burning or undercooking it, it's just really fucking weird to us, so we can't help but go on and on about it.

pizza is literally the cheapest filling food you can get in this city; even a decent pizzeria will sell food for cheaper than any big name fast food place. the one dollar pizza places run by arabs are absolute shit and if you're a NYU nigger or flyover tourist who judges pizza based on something like Two Bros you should just kill yourself now

In 1986 you could walk up to any homeless runaway kid with two pieces of pizza and get a blowjob. It was great. Then people started getting bummed by AIDS then faggots started giving the kids AIDS. Then Ed Koch who was a fucking fairy himself was pressured unto opening their own boys and girls town community centers for kids. Then some other idiot came in but then Giuliani came in and cracked down on homeless kids and young teen crime/prostitution and all those vices. You use to be able to clean a kid up and take your bit of sugar out to the clubs and do blow and have a great time. Well... In any case, you get older and get richer and move out of the city.

Pizza was a commodity to influence. That's what I got out of it back then.
