Thick edge was basically bleu with every gradient of doneness in betweeb. It was cooked over some thick beautiful charcoal available only in Japan that I wish I could remember the name of. Beef tartar from this place I worked at as a busboy

It was my first time having tartar and it was delicious

I believe the tartar also had capers in it
It was on this thin bread thing that I forget the name is with a house-made aioli in between

There was also shrimp a la planche with a divine sauce that sopped into the bread the shrimp was on.
It was just as good

These statements are utterly incompatible in the US so I know you're just lying. Nobody knows how to cook either so that's a lie too. Like maybe they "know" in some sense but only at the most basic level to the point that going to the olive garden or buying frozen slop is genuinely better quality than anything they would make.
