They take 7 minutes at 350 or whatever the fuck the temperature knob is set to. If you do a large batch all at once or several batches of chicken in succession the oil doesn't have time to get all the way back up to temperature and you'll potentially send out undercooked chicken if you pull them out at exactly 7 minutes without taking that into consideration. When chicken is fully cooked it tenses up, if it's still wobbling when you shake it and the breading is going soggy and falling off then you overcrowded the fryer and they need another minute or two.

It just comes with experience, I've been at this for two years. I can stick potato wedges or frozen breaded okra into a fryer and just know when they look done, by eye, without having to set a timer.
