Try this fermented hot sauce. 1 white onion, 4 springs of cialntro, a few garlic cloves 3-4, 1 green apple, jalapenos. Femented for 2 weeks and add some apple cider vinegar to taste to make it shelf stable. This tastes better than any fucking hot sauce you can buy i promise you

Yeah, as long as they aren't shit jaos that have been going around the last few years this is what you do:

-deseed and vacuum bag then deep freeze, maybe blanch like that one anon said. Deep freeze, not your frost-free kitchen freezer.
-smoke, or don't, dry and jar with a vacuum pump. Should be good for 10+ years..
-roast in oven, vacuum bag and deep freeze. Good for probably 5-10 years for salsa use.

I bought a bunch of serano 1 or 2 weeks ago, pulled stem, diced and pulverized up(should have just diced them), submerged under some water and salt and bottom of sourkraut juice. The thing was carbonated like beer yesterday.
If no kraut juice just do without. The salt is gonna protect the good germs on the pepper. Praise god.
