Flank/skirt/flap meat.. Cooks up quick and easy on high heat. Don't have to faff about with indirect this or that and it feeds a crowd. Make a chimichurri to go with it.

Throw on grill and cover will smoke and fllame like crazy, shut dampers down, let smoke
pull cover baste with dressing
repeat process opening dampers up till end

I just like simple things, ribeye steaks, burgers, lamb chops/rack of lamb, sausages/hot dogs and sides like sweetcorn, baked potatoes, sweet potatoes, grilled onions, then serve it with things like coleslaw and simple salads.

I've done whole chicken before too, and beer can chicken, but i feel like it's always a bit boring and if you're going to do chicken, you need the rotisserie attachment to make it great.

The difference is you're cooking over charcoal. Not only does it get to temperatures that far exceed a home oven, it also has smoke that's created from any fat that drips down onto the coals. Because of this it produce far more complex flavors. It's worlds apart. A steak cooked over charcoal vs one cooked in a pan on an indoor stove is night and day.

It's like wondering why the best pizzas are made in woodfired and charcoal fired ovens, and not home ovens, because they're different beasts, and temperature, as well as the type of heat transfer, is extremely important to producing certain types of flavors.

It's true. I've had amazing pan-seared steaks. But I'm often relying on butter and herbs to impart some extra flavor on top of whatever crust I can get. With a charcoal grill, salt and pepper is all I need on a ribeye.
