I thought the thousand island part means there's minced onions or in this case probably rehydrated dried minced onions?
Anyways how I make mayo:
Make it in the container you will store it in - I use pint plastic containers with lids, you can use quart or bigger if you are feeding a crowd
2 egg yolks, cold from the fridge, I find it doesn't emulsify when I use room temp eggs
1 or sometimes 1.5 lemons, juiced
If you want to be fancy you could add lemon zest
I like my mayo sweet and sour
honey or maple syrup, about 1 tbsp
salt - 1-1.5 tsp usually
finely grated garlic - 1/2 tsp
mustard powder or prepared mustard - 1/2 to 1 tsp
1/8 tsp guar or xanthan gum to thicken it, this is not optional
pour 1 - 1.5 cups neutral oil in the container, place an immersion blender over the yolks and start pulsing at the lowest speed setting, do this for 10-15 second then start moving the blender around a little and then incorporate it all together
it will firm up a bit as it chills
I need to make more mayo actually used the last of it to make a chicken salad sandwich

It will turn out well, I think. Particularly since simply (good quality, flavorful) tomatoes together with mayonnaise are themselves an excellent flavor profile. And I was serious about using the sauce on burgers, even if that might sound like a boring, obvious option. It really takes the burger experience to a different level, in my honest opinion.
