There was a dumb thread about cheese while I was making cheese, so I decided to post about it and make the thread good along with another based fellow.

My neighbor has goats that we milk and make cheese with. Valencay is a fancy french goat cheese that is covered in ash and then the brie type mold is grown over the ash.

Sometimes you get feta up about all these fancy cheeses and just make a big batch of feta.

The cheese got blacked. Ash.

Now it stays in 85% humidity and 50-65F curing chamber. A magical mold will cover the cheese. After 1 week the temp is dropped to 40f and the humidity is increased to 90-95% where it will rest for another 2 weeks to 2 months.
