I have lived among the Mexicans (my ex-wife and in-laws) and I am here to tell you what is truly an authentic taco. The base consists of two corn tortillas, heated and slightly charred on a pan, stacked on top of each other. Next is your choice of meat, followed by diced white onion, and then finally chopped cilantro.

This may sound dumb, but it's legitimately for structural integrity. Some of the meats they use can be fatty or contain a lot of liquid that has the potential to really mess up the first tortilla so the second one holds it all together.

Also, if you're trying to replicate this at home OP, I assume you're British or something, I've got a recipe for pork carnitas in the pic related that I've quality tested among my ex and in-laws. It's changed a bit over time, but I recommend swapping the slow cooker for an instant pot and pressure cooking it for 17 min per pound of meat. Also swap the broiling step for pan frying the shredded meat bit by bit until it's crispy. All the other steps are the same though.

tortilla is crucial, then a main filler and usually a garnish. corn is preferable for the tortilla, but taco can really have anything inside. this is over American white family taco night meat and eggs and cheese and lime and pepper.
