Yeah pig is high in fat. You should never have to add any kind of oil or butter with high fat meats. Mexican dishes tend to have the fat in the food instead of added to the food like Americans do. I used to eat this stuff when I was poor. Now I buy better quality minced pork and add hot sauce after cooking it. I'd rather eat flesh than mystery chunks that might as well be literal pig cancer.
