Dish brush for most stuff.
The dark green bit from sponge but without the sponge for wooden stuff like spatulas, cutting boards and also for getting off anything that's harder to clean from stainless steel.
Steelwool for when I give up and just say fuck it. Mostly for grill stuff.
Everything gets cleaned after use, I don't replace them on a schedule just when I feel like it which has worked out so far.

The water piks are better. You'll probably be able to start at max since you have a flossing regimine but if it does hurt they have pressure controls to work your way up. Waterpik Aquarius or something equivalent is what you want, it needs to get up too a certain pressure threshold that blasts away biofilm. IDGAF, I get a six pack of the ones in Opie's OP at the Tree for a dollar. They work great. Sponge side for plastics you don't want to scratch, green scrubbie side for tough shit and everything else.
If i'm cleaning stainless or cast iron, it's the SS Scrubbie.

Depends what they're made of.
Good knives, the kind that you sharpen, are often made of materials that shouldn't put in the dishwasher. Stainless steel is good for many things and cleans just fine in a dishwasher, but it isn't great at holding a fine edge. Also, some knives have wooden handles and that's another thing that isn't necessarily great in a dishwasher.
I put my table knives and vegetable knives in. My carving knife is always washed by hand (because it is an heirloom with a real ivory handle).
