Copenhagen was the Michelin capital of the world for the 2010's and they basically set all the fine dining trends for the past 15 years. NOMA is considered the world's best restaurant then there's Alchemist and a bunch of other really far out there high level restaurants. Nordic fine dining chefs basically had a consortium in the mid 00s to establish a new chefs code to direct their cuisine and get the world to take them seriously. The manifesto had alot to do with foraging and preservation methods, basically only using what was immediately available in their backyards. From there they set the trend of food preservation methods and turned fine dining into its modern form.

Ofc though the average /ck/ poster doesn't give a fuck about what happens in high level culinary and judges every country based on takeout restaurants.

As it should be. Why should I judge a nation based on what a tiny fraction pretends to eat as an entertaining diversion between bouts of snorting coke and fucking child prostitutes?
