Any kind of crusty bread, garlic aioli spread both inside and outside as the fat to cook your grilled cheese in, a quality sharp cheddar + American cheese

Or

Sourdough bread, pesto, Fontinella cheese, optionally any meat you might enjoy (thin slice steak, deli roast beef, pastrami are all good choices, but it’s just as good without) (get some of that pesto on the outside of the sandwich while you cook, it’s fucking delicious)

OR

Crusty bread, pickled hot peppers, pesto, Sharp provolone, and pastrami, cook slow so that pastrami gets nice and hot and the cheese melts and combines all the ingredients together - it’s a riff on a panini recipe a local place used to do when I was growing up called The Blackbeard

My fav grilled cheese:

Step 1, prepare a plate of olive oil.
Step 2, prepare a plate of balsamic vinegar.
Step 3, dip in vinegar and olive oil.
Step 4, swiss cheese in thin slices.
Step 5, put some ham in the pan and cook it a little bit.
Step 5, slice apples, pears, or other fruit in to thin slices and layer with cheese.
Step 6, add ham.
Step 7, grill as usual.
