I don't know if it's niche, but pickled tomatoes are good. The Russian store should sell that as well.

Pickled watermelon is kino, and I always pickle my rinds. Most fruits are good pickled if you make the right brine. I made pickled crab apple as a kid with my grandparents, that was unexpectedly nice.
