How are "acquired tastes" a thing? If you don't like it the first time, why would you try it a second time?

I read somewhere that we can perceive an odor more acutely the second time we smell it, because our brains have changed to be on the lookout for it. Maybe there's something similar going on with acquired tastes where after the frist time you might mostly perceive a food as being bitter, the second time around your olfactory receptors could pick up on the more subtle aromas in the food.

It's like listening to an album, reading a book, or watching a film that is considered "avant-garde" and lauded by well-known critics. If you're not used to that sort of thing yet you're open-minded enough, you're most likely not going to "get it" in the first listen/reading/viewing, but you'll probably still give it another shot just to really closely examine it and see what all the fuss is about. I thought diet coke was the grossest thing I'd ever tasted when I was a child. The artificial sweetener aftertaste was so overpowering I didn't even notice a "sweet" aspect to it. Now as an adult regular and diet colas taste almost the same (with regular being a bit cloying). Not that it matters cuz I drink soda only once or twice a year.
Not sure if its from getting used to it, changing tastes, or what.

No. Depending on your diet and coating of your tongue, the flavor profile changes.
But sugar is sweet, and aspartame has extremely bitter flavor notes. Sucralose + acusulfam k might be the best blend until somebody manages to create a okay Stevia blend. Even then all sweeteners has completely different flavor profiles, sadly.

Your palate changes over time. Kids have more sensitive taste buds, so they prefer blander, less spicy things. Similarly, you can acquire tolerances that can negatively affect your palate. Americans put way too much corn syrup in their food, so it can take a while for their palate to adjust to normal food. Just one example. Tastes change depending on what you're used to. You can build tolerance to spicy food, you can desensitize yourself to salt to the point you need piles of it just to taste anything. The human body is an adaptation machine.

Children, downies, and autists tend to stick to what they’re familiar with. If you eat nothing but french fries, tendies, soda, and ketchup/bbq sauce/honey mustard (when you’re feeling adventurous) it can be a pretty big leap trying anchovies or liver pate or raw oysters – or really anything that’s salty, or tart, or bitter. It’s kind of like if you viewed the world in black and white with only the occasional hint of red/yellow/blue, but then found yourself in a lush green forest, were overwhelmed by this nasty “green” shit, and vowed to never leave your basement again.

Another apt analogy would be jazz. If you listen to nothing but top 40 pop garbage and then hear Ornette Coleman you might think your ears are on fire, but if you get a little more into music and start learning about different styles and maybe taking up an instrument and studying a little theory, all of a sudden, your autotuned, 2 chord trap beat trending-on-ticktock mega hit sounds like nails on a chalkboard.

Also, like, eating vagina. Kind of weird the first couple times. Then you find yourself single and are waking up to dreams of diving straight in.

Pro-tip: if a lot of people like a thing and it seems like they’re just being contrarian and pretending to like it to seem “mature”, you’re probably the one who doesn’t understand. Nobody is saying you need to like everything, but having preferences isn’t the same thing as being a picky eater, and trying something once and swearing it off forever is pretty much the definition of being a picky eater.

Words don't mean the wrong things because you say them.
Dark roast has more flavor AND more flavor notes. But you can't taste most of it because the flavors don't align well, alongside excessive acidity and sourness. The roast flavor itself is also excessive on a lot of darker roasts, usually overpowering some of the more interesting flavor notes.
You then add milk, which balances the sourness and bitterness allowing you to taste more. And then the fat, sugar and salt amplifies the remaining tastes, which also generally compliment the taste of milk but cream even more so.

Generally lighter roasts are better than darker roasts because the roaster picks better beans for it, and generally try to stop the roasting at a level where the flavors compliment each other more.

Taste is something that grows as you grow as a person, I remember when I was like 14 years old and sushi started getting popular among my fren group
Long story short my autistic ass nearly threw up the first time I put raw fish in my mouth, but I kept kept eating to avoid looking like a faggt
10+ years laters and I go out for sushi whenever I have a chance, also took classes but it's too frustrating to find good sushi fish where I live
