A lot of the dishes blend together because everything is family style, but yeah it is delicious. I was in the southern parts and got sick of eating seafood but still enjoy fish dishes. Those are just the one they catch. It's traditional in Chinese society to recapture oil out of refuse through boiling, theyve been doing it for literally centuries. It's so common practice that even big businesses are in on it so it probably makes it into a lot of the food supply so people that don't even think they are using gutter oil are actually using it. the use of gutter oil in CHYNA is well documented as far as "it definitely happens".
what's not NEARLY as well documented is the effect that the current Ukrainian war is having on cooking oil prices.
Canola (and all other cooking oil) prices are still near all time highs, and everybody and their dog has experienced excessive rise in potato chip prices. There's also definitive flavour changes in potato chips since 2022, and at this point it's fairly intuitive that frito-lay and other potato chip products have been made using "alternative" oils, whether it's for frying the actual potato chips or for generating the flavour shake-on seasoning (trend seems to be reversing as of within the last month or so - thank god).
I would not be surprised if "recycled" cooking oil was a part of this process.
This is before getting into the decades long racket that the olive oil industry was ran off of.
With the commissary structure for most norf murikan restaurants and almost zero transparency into their oil sourcing, I'd much rather trust the local Chinese restaurant (who operate on the same manpower shortage as every other small business) over whatever the fuck Sysco is getting into this week.

I'm an Englishman, so take this with a grain of salt, but I'd definitely say Hubei food was very spicy. I don't think it's as famous for spiciness like Sichuanese and Hunanese food is, but it's definitely up there. My ex had to tone everything she made way down to suit my weak Euro tongue.
Oysters are one of my favourite foods ever, so I personally don't think there's any way of cooking them which can match how amazing they taste raw. It's so not something Chinese people would ever be down for, though.

The Chinese utterly mog other Asian cultures, with the exception of Korean, it terms of the sheer amount of variation in dishes and ways to prepare them. Most other Asian cuisines have like one or two patented dishes that are super popular, but I could eat Chinese food for every meal every day without eating the same thing twice.

I also appreciate them for having legit Chinese restaurants that literally cater only to other Chinese people, and they don't care about getting westerners to come or bother explaining the menu to them. They're just unapologetically Chinese and it's kind of admirable compared to Japs who open up some trendy sushi or ramen place to get the most Mayoids in as possible.
