Lurked in these threads a few times, and I never read anons talking about coffee instead of poorfag gear but here it goes

How much do I have to know about two coffees to know they taste the same? Same country, altitude, process, roast level/quality = same coffee? How useful is that information? Should I ignore that shit and look at the flavor notes? Or ignore the notes and look at those specs?

Also if you are a normal undiscerning pleb, how many types of coffees can you distinguish? So far I've noticed fruity coffee, nutty coffee, fermented coffee, earthy/dirt, burnt coffee seem to be real and very different. I've never had coffee that tastes like chocolate or caramel. But none of that shit matters. I suspect I want nutty coffee and I don't give a fuck about anything else. I hate going to a nice cafe and disfavoring the fruity coffee they give me against mcdonalds, and I have no idea how to find a similar coffee even though it's probably cheaper and more common.

Potentially, but its by design. The grinder is on its 3rd revision since 2015 so it if was an issue they'd have changed it by now. Its a variable dependent on your burr gap, not something you're going to independently tweak. Its likely just there to prevent stalling if your burrs get jammed. If grinds are exiting the burrs as they should, there shouldn't be too much "back pressure" on that top plate. If there's a buildup, those springs will compress slightly, nudge the top burr up a little, let shit keep grinding and spring back into place. I think comandante is doing something similar with their "auto centering" axle. The axle is designed to have a slight "wobble" so the beans shove the burr into a central, "floating" position. Pretty sure the hg-1p, hg-2, and Key all use the same idea. As long as its repeatable, its fine.

If you're looking for nutty coffee, not at all. Stay away from single origins unless they explicitly mention nuts. Find a nice big commercial roaster and stick with their medium-dark blends. "Espresso blends". Peet's, Stumptown, Intelligentsia. You can probably find what you're looking for at costco. Cheap central and south american beans are what you should be looking for. Anything that describes itself as a "crowd pleaser".

Because it's the cheaper option, I'd search for the precision basket like IMS, pullman, VST that has the smallest hole size and try that. Maybe either of them would work, maybe your current basket is swiss cheese. Another thing I know is VST has smaller holes the shorter the basket, but that will reduce your max dose.

The more expensive option is to buy a grinder that produces less fines. But it will change your coffee, some people really insist fines make your espresso better to a point, some people don't.

Lastly you can paper filter your espresso by putting a filter in the bottom of the basket. This might require you to grind finer to get the same flow resistance/ shot time. Well, ok, I thought of one last speculative idea. But this one is from me and I've never heard it from a coffee guru. I've never tested it properly, it's just an idea.

Get one of those dosing cups that fits your portafilter, the ones you can place them together and flip them upside down to dump the grounds into your portafilter. Get a WDT tool/needle whisk if you don't already have one. Whisk the fuck out of the grounds while they are in the dosing cup, the idea is the fines will migrate towards the bottom. When you do the flip and they land in the portafilter, maybe the fines are more distributed to the top. And maybe less will make it to the basket's holes during the shot. Again this will probably change your espresso in some way. Maybe it clogs less and is faster? Maybe the puck falls apart easier because the fines aren't evenly distributed? Maybe the water has a harder time wetting the puck? I can't say.

I got a Venti-sized Pike Place (Black) from Starbucks earlier.

What do you think of this?

I normally just run to Dunkin' and get a large black coffee but I'm thinking Dunkin' coffee is more for mix-ins and flavorings and such.

Think I probably preferred the Pike Place.

Cost difference-- Dunkin' large is $2.96, Pike Place black is $3.45.

Waste of money I know but I don't have a setup or equipment or coffee machine at this point and I like the convenience.

Also I engaged in a bit of autism during the visit because I went back in and had them pour me another because the teen girl working the window put a "stopper" in my cup despite me not asking for one. I opened the new Penazzi Perù Tres Mosqueteros, finally.
Just one goffee after dinner because I was away from home for the whole day and couldn't have a first solitary cup to set the grind size correctly, so I went with the previous grind size (1.8 rotations on the JX Pro) and made 3 cups.

The flavor profile on the bag said that there's: toasted bread, hazelnut and ripe fruit at the end.

Before drinking this goffee I ate a yellow kiwi so, since I didn't drink water to clean my mouth, it's highly possible that I had a fucked up mouth because the kiwi is sweet and acidic, however the goffee tasted a little acidic too, some sweetness kicked in after, then the hazelnut and chocolate came in with a full dark body, less strong than the Brazil Santos "X" but still persistent and clear. This coffee was more clear and focused than syrupy, I need to find the ripe fruit notes maybe by going coarser but so far with 1 quick cuppa I'm happy with it.

I'd temporarily place this Perù single origin on 2nd place after the Brazil one, let's see how the flavor develops in the next days.

1) Brazil Santos "X"
2) Perù Tres Mosqueteros
3) Miscela del Mastro Torrefattore
4) India Cherry AB <-- this was a hit or miss, sometimes it was interesting and sometimes it was acidic and with bitter notes, but then again it seems that all the previous Indian coffee I tasted were the same, maybe they're not for me

I still have 1 coffee left, the Guatemala Huehuetenango.

Last thing, I found the vacuum sealed bags of coffee in the fridge to have lost some tightness and to be filled with some air, probably the beans degassed in these weeks (strange because I check every week and the bag was tight), both for the Perù and for the Guatemala. Strange, maybe tomorrow I'll seal it again in a new bag just for the sake of the autism.

I have been learning to use my moka pot and I am only getting 130ml out of a 6 cup moka pot before it starts to get bitter? Its on very low heat and coming through very slowly and tastes really nice but my grind is on the coarser side, would that be the reason? I'm going to grind my next batches finer

using hot water in the base i hope.
also try using high heat until coffee starts flowing and making a pool in the top and then turn to min heat until half way up to the bottom of the spout, then turn off, once coffee reaches the bottom of the spout(or close enough) take off stove and run under cold water or place in a bowl of cold water for 10-20 seconds.

As with all things I imagine it's worth it to drink coffee in moderation, so that the body can recover from it. I mean sure that's fair and I know for most people it's not worth it to them to change their protocol because of this, but I'm quite sensitive to coffee anyways so for me in particular this is not a bad idea and is a pretty workable thing for a couple reasons.

A) I find the benefits (for me) wear off fast as I build tolerance. B) As I noted I already space out my caffeine use, so spacing it out more is just a matter of degree for me, not difference. C) If I feel like I'm not benefitting I can go back to doing what I do now and drinking coffee more frequently... but why not see if I feel a benefit? I frankly don't see a downside in keeping an open mind and testing things out for oneself. I will say that you make a good point to note that most people drink coffee a lot that SHOULD be taken into account, that's why I'm just considering an alternative protocol, not switching to a full dogmatic belief.

I too enjoy my goffee and derive great pleasure from the ritual, so this is not coming from any place of resentment towards the beans.
