Is that an American thing? Canned tuna here is comes with a whole chunk of meat. If you are poor you can also buy "tuna crumbs", but these come in a pouch. Even then, this nothing like the mechanically separated meat used in hotdogs, it is just a bunch of small chunks instead of just one big chunk of meat.

There is solid tuna, chunk tuna, and chunk light tuna. Solid and chunk are usually albacore and are bigger pieces. Chunk light is from a different fish, usually actually a mix of smaller types of tuna. I'm not an expert but I'd wager that the chunk light, coming from smaller fish, would actually have less mercury.

I don't want to fight I'm a fan of the smaller fishes. Mackerel, herring, sardines, when I worked at Subway I know they used chunk light because I had to prep it. Didn't stop people from buying it, tastes great mixed with mayo. Each on their own though the albacore is better in my opinion, at least flavor at texture wise.

I just ate one of these the fish was bigger than a sardine but smaller than a mackerel. Spines and skin included but they're soft like sardines despite being bigger fish
