I bought an entire chicken, i've cut off the meat that i've wanted for making later on. What should I do exactly with the bones and hard to get to meat?

Well first of all you learn how to butcher a chicken properly so that you can get all the meat with ease. Once you're done, stick the carcass in a big pot full of water, and simmer it for 6-8 hours. Now you've got yourself some chicken stock for your soup. I usually freeze mine and save them for later.

OPs either an ESL or a retard, possibly both. He may even mean he bought a pre-cooked whole chicken

How long does the stock last in the fridge before needing to freeze?

same as the meat, i wouldn't go more than 3-4 days.

A week or longer. Though I tend to save my bones, then do huge batches of stock and then freeze it in individual jars for use.
It's pretty versatile.

Make broth and use it later to cook your rice, beans, or lentils. Total game changer.
