I actually know where many of my favourite places do their shopping and know the delivery thingies a few of them use. None, to my knowledge, are sysco, which is surprising, really, since I think the majority of USican restos get their stuff from them.

Most restaurants get at least their basic shit like iceberg lettuce, milk, cream, fryer oil, dried spices etc. from sysco/US Foods. Where I work we get meat and "seasonal produce" from a seperate vendor.

really depended on location. if it was in an area that thrives on public gatherings for events or tourism it was a struggle. otherwise i can attest that many restaurants crushed it if they were already well positioned for the take out market.

Its hard unless you know what to look for. It's probably easier for a non industry person to tell based on things like if the restaurant is family owned, chef driven, rotating menu, successful, written about in high regard, etc. These qualities guarantee nothing but can help.
