What's the deal with Asian people and rinsing rice until the water runs clear? Like I've tried to do that shit and it takes forever and never runs clear. Like I'm hungry I don't give a shit about some starch on the rice

Not asian but it has to depend on the variety of rice.

Longstory short, starch in grains is composed of different types of starch. The most common types of "starch" are amylose and amylopectin.

Amylose is mostly a chain of sugars and because of that, it is very solluble in water. Amylopecting on the other side more solid.

The type of starch is also important on ther grains, like wheat wheter it is good for pasta or baked bread.

Also, take into account if the rice comes parboiled, as that one was already washed at the factory.

They wash the rice to achieve a different rice texture, but if you parboil the rice with the husk, you can transfer some husk minerals to the rice.

today it's washing the chemicals
either way if you live in a white country, you don't have to wash it, that's done in the factory

my experience with southern Chinese people is that they just don't do it. but to wash your rice, just bring it near a boil then add more water, stir, and empty. now it's clean and clear.

i think that there is special sticky sushi rice for that, and the stickiness desired is not from the stuff you rinse out of the rice, because sushi rice is also rinsed/washed, actually washing sushi rice is like more intense them most rice washing

Most Asian households I've been to have a rice washer so that's probably why they can get is so clear so quickly. Try looking around for a used rice washer could really speed up your prep.
