Gee, they will say anything to try to fit in these days.

Anyway, OP, most of the recipes you’ll find on Google are actually pretty decent. Except you’ll probably want to add a little more black pepper than they call for. Don’t use fatty cuts of meat. And grease comes from how the scrapple is fried. Just don’t use too much oil and you’ll be fine.

OK, so you boil the head with the meat attached. That falls off, you strain it and discard the bones/skull, and "reserve"/keep only the meat.

I've seen Jones brand frozen there. It's partly to make it easier to slice. Was just so-so IMHO. Usually see Rapa brand in the fridge sections which is fine to me, though others swear by Habbersett.
Usually just cut it just less than a quarter inch thick, and fry it up with some oil in the pan. Let it cook ten minutes or more till it gets nice and firm/crispy. Supposedly, if you're asking yourself if it's time to flip, that's when you tell yourself to wait another few minutes. And I prefer mine with syrup. Now I'm regretting not buying some on my last grocery run.

It's somewhere between lamb and pork, in terms of flavor. The texture is absolutely horrid, and there's not much you can do with it, other than slice it and fry the hell out of it.

Scrapple has significant amounts of flour and cornmeal along with the ground meat. And the meat isn’t really ground into a mince per se; since it is ground after it is cooked, the consistency is much finer. This carries over to the scrapple itself. Once it sets up, if the proportions are right, it can be sliced thinly and fried without falling apart.

Yeah Jones is the one. There's another brand I saw once that I think was also made by Jones. Yellow packaging and a name with "meadow" or something in it. Rapa is somewhat bland to me. Habersett is what I've been eating recently.
