The brown is just the beef oxidizing. Does it smell sour, rotten, or generally off-putting? There's enough monkey left over in your brain after thousands of years to know when things smell bad, and the instinct not to eat them Did you have to be taught to not eat shit from the toilet or rotting garbage from the trash?. If it's bad, you shouldn't attempt eat it. Toss it out and don't get sick.

Ground beef or steaks taste so much better when they are grey and smell a bit cheesy. It's a fine line though. They go from grey to rotten very quickly. That's under refrigeration. No idea about OP's meat.

Turned out fine. I'm surprised me blasting it with spices didn't make it inedible. Actually the sauce is really good because I made it with port. I think my chicken stock is off too because I gagged when I smelled it (I only used a bit). I salted and seasoned the FUCK out this food and actually tastes good. Yes I am going to eat it all myself. No I am not fat. I will update if I get violently ill
