Most people who "like spicy food" or regularly use hot sauce are not eating shit that causes them physical pain. It's not some tictok internet challenge thing - which is obviously where you're getting your ideas from. It also doesn't "mask" the flavor of the food. Do you not use salt and pepper when you cook? Or eat a roast with some gravy or a pan sauce? Do you not dip fries in any kind of sauce? Or squeeze some lemon over fish? It's the same thing.

Hot sauces are made from complex mixtures of ingredients and so the right sauce adds both additional flavour - but also the sensation of "heat" itself, which is something that certain human beings like.

I like hot sauces because they're concentrated flavor and have a good kick to them. It's vinegar+salt and fruity peppers, sometimes with other stuff added in like pineapple and mango that compliments it. The actual heat you have to tailor to what you find pleasant, but usually if you eat peppers regularly, you grow a tolerance and can eat spicier things, which just open up more flavor options.

I won't eat fresh hot peppers raw like some people do though.

And to your other point, the pain begins to feel good, and it allows you to enjoy your food more. Eventually you keep chasing that spice level where you're somewhat struggling to eat it but it's still edible and before you know it you're eating extremely spicy food without blinking an eye.

Some hot sauces stab you with the sensation quickly while others build up to it and then it hits
And in my experience "Spiciness" add more to a meal than take away from it
It happened to over a dozen times that im testing (For example) a tomato sauce that im making for a pasta and im just like "This feels too plain" so I might add in some pepper and garlic, and then im like "That's nice" and when I serve to others, its not like they complain, and in fact, some even gave me kudos for the spice.

This isn't true at all. I'm a typical white guy and didn't eat anything spicier than a pickled jalapeno growing up since my parents don't like spicy food. However today I can eat food significantly spicier than even my friends from China can handle. We recently went to a chongqing hot pot and ordered their chongqing broth, but the waitress said the kitchen added something like 3x the amount of hot oil for us. I greedily ate from that pot while two of my friends, from China, cried while tasting it
Point, you can build a tolerance. And the appeal is that it actually gets you kind of high
