Post chemistry and food science stuff that chefs are too dumb to use.

rotovap is used by only the wankiest of wanky chefs with loads of money at their disposal. im not jealous of this fag at all

Bartenders or chefs?

Bartenders don't really have a use for one, but chefs use ultrasonic homogenizers all the time.

I'm growing these special melons to make the worlds best melon sorbet. I'll be utilizing my rotovap to concentrate the melon juice for it. :D

Wish I had one of these but I only have a dismembrator. I don't really need nano emulsions for food, although it would be cool to make a perfectly clear vinaigrette. :[

cool, if you get a centrifuge, you can separate melon into its constituents. >>19305597

The rotovap is cool, but slow and boring with water based stuff. Makes excellent fruit concentrate tho.

Dismembrator coffee. Cold brew woth non dairy creamer in 3 minutes. Needs work because it is literally impossible to filter. Even with a centrifuge...

I have developed some cool techniques for such things. You can really concentrate aromatics if you use a rotovap correctly.

I am 102% certain that no chef has used this piece of equipment for cooking. It's a power supply to run electricity through food for processing. Benefits of Ohmic heating include: uniform and rapid heating, way less cooking time, better energy efficiency, and volumetric heating(heat from inside). You must be regretting challenging OP, right? t.OP

The metal bit goes up and down 20k times a second with over 100watts of energy. This breaks cells, emulsifies shit, cavitates, and greatly speeds up extraction. The liquid that is sonicated heats up there is so much mechanical energy being dumped into it.

Solids sorta just flow up the probe. Idk why.

With a metal bit inside the rim of a glass jar?
Well, hope your aim was good enough. And hopefully nothing happens where the metal spout touches the glass jar. Cause it would be bad if they touched.

But yes, you are correct. If the probe touches glass it will shatter the glass and possibly break the probe. It's also extremely loud and can damage your hearing without you realizing how loud it actually is.
