Why do Americans get so irrationally angry about Gordon's grilled cheese recipe? There is literally nothing wrong with it.

So what? Some cheeses, like the specialty cheeses he used in this recipe, taste better when they're still solid. He heated the cheese up enough to soften it and warm it so you don't get a bite of cold cheese.

People with developed palates usually want more depth of flavour to their food rather than just a greasy carb bomb. Kimchi adds a nice acidity to balance out the richness of the cheese, as well as some piquantness and an interesting contrast between the warm cheese and the cold kimchi which adds new dimensions to the dish.

1: that cheese has not been cooked, if there existed a meme of some famous chef saying something about good being raw, now would be an appropriate place to use it
