I'm legit addicted to banh mi. I found a Vietnamese place that lets me add extra noods and beef. Then extra eggs for my banh mi. I am now impoverished and approaching ham planet orbiting. I refuse to back down from my five banh mi per day diet. I legit need to find a bakery that can do simple rolls as good as the ones these people make so I can not be homeless under a tent of banh mi wrappers.

If you are curious it's this weird combo of cold cuts with pate, cilantro, julienned carrots/cucumber/veg, and jalapenos. Simple but crazy good.

Real answer: Asian restaurants have different supply chains from typical American Sysco joints. They get cheaper rice, produce, meats, etc by forging connections directly with suppliers and distributors. Rather than going to one or two suppliers for produce etc., oftentimes there will be a half dozen different Chinese/Japanese/etc companies just supplying the vegetables. Who has the cheapest lettuce, the cheapest bean sprouts, the cheapest carrots, and so on. When I worked in Chinatown we were taking multiple small deliveries every day from different companies, and my boss was always haggling and threatening to change suppliers when she wasn't happy. That, combined with a general sense of frugality, low wages for immigrant workers, cheap rent, 0 spending on maintenance, etc keeps your local Asian joint in business with a healthy margin to pay for the owner's kids' college tuition. And you know damn well those kids are helping out in the back too when they finish their homework.

there used to be way more greeks here so you'd get actual greek gyros but now there's turkroaches everywhere who have their own restaurants that are fucking good generally. Vietnamese food is harder to find but Banh Mis are good to have every once in a while; I like the flavor balance a lot. Mexican food is the most overrated slop but tortas are sick.
