A preferment helps bread last longer. I do 6 loaves at a time and a batch of croutons with my left over bread. Freeze 5 of them and only have to bake every week and a half to 2 weeks. I just let the dough dry and it flakes off.

It took me a while to realize loaf forming has a huge impact on the final product. If you don't have a smooth outer layer with seams against the pan you can lose a lot of gas / steam early during baking resulting in collapse before the structure is fixed. I like proofing in my dishwasher with a pan of kettle boiled water.
