What you are failing to comprehend is that the key difference with both good mom & pop sandwich shops and pizza joints versus shittier chains is the bread. The toppings are - as you suggest - pretty generic, but again, that's secondary.

Best mom & pop sandwich shop I ever ate at would just get a haul of bread every day from a local bakery and keep making sandwiches starting at 11am until they ran out of bread. That's the way to do it.

Jersey Mike's isn't *bad*, but it's VASTLY over-priced for what it is. There is nothing special about that place whatsoever and the sub they are known for is about the cheapest configuration short of balogna. I mean, $15 for sliced pig brick and cold provolone?
